Chef Boyd RD: Two Plus Two Pancakes

The kitchen can be a fun place to learn. One of my favorite hobbies is concocting recipes, some turn out really good, some turn out just so so and some well taste alright but desire the pleasing look. I hope you enjoy this one, the kids can help and you can make it a math puzzle if you wish.

2 cups Bisquick (low fat is fine),
2 cups milk (fat free is ok),
2 large eggs,
2 tbls sugar,
2 tbls vegetable oil

Mix the ingredients with mixer on high for two minutes. Preheat a skillet on medium to medium high heat. Poor 1/4 cup measures of pancake batter onto heated skillet. Once the edges are firm and most of the bubbles have popped it is ready to turn and fry for another 30 to 45 seconds depending on humidity, altitude and room tempature.
